Indulge in this delicious treat without the guilt bearing on your shoulders. Sweet potatoes pack a powerful nutritional punch. They have got over 400% of your daily needs for vitamin A in one medium spud, as well as loads of fiber and potassium. They have got more grams of natural sugars than regular potato but more overall nutrients with fewer calories. These sweet potato crepes are packed with carbohydrates to fuel your day.
INGREDIENTS
• 4 egg whites
• 1/4 cup of boiled/baked sweet potato. (Smashed)
• 2 tablespoons of old fashion oats
• 3 small packets of truvia
• 1/2 teaspoon of cinnamon
• 1/2 teaspoon of baking powder
• 1 tablespoon of 100% natural Peanut Butter
INSTRUCTIONS
- Pre heat a non-stick flat pan at low-medium heat
Note: make sure it is a good quality flat pan. It takes good skills to make crepes, it is not just about pouring, like you would do with pancakes. - In a blender, add the following in this order: egg whites, sweet potato, and then all the rest of the ingredients, blend for about a 30 seconds. Batter is ready!
- Pour the batter into the pan and immediately lift the pan by the handle and tilt it around to create a very thin crepe. Cooking time is almost instant. Slowly lift the edges of the crepe before attempting to turn it over (Crepes should be really thin and soft).
