So many times healthier treats can be hard or have that artificial sweetener flavor. This cookie is surprisingly soft, chewy and naturally sweet.
Ingredients:
- 2 ripe bananas, mashed until smooth
- 1/3 cup chunky natural peanut butter (creamy works as well)
- 2/3 cup organic unsweetened applesauce
- 1 scoop vanilla protein powder
- 1 tsp pure vanilla extract
- 1 tsp butter flavor extract
- 1 &1/2 cups old fashioned oats (uncooked)
- 1/2 bar of very dark chocolate chopped into chip size (I used 88% cocoa) OR dark chocolate chips
Preheat oven to 350. Mix Mashed bananas & Peanut butter until completely combined. Add the applesauce, vanilla protein powder & the extracts. Mix until completely combined. Add in the Oats and mix well. Stir in the Chocolate chips. Let the dough rest for about 10 minutes then drop spoon sized balls onto a cookie sheet covered with parchment paper and bake for 30 minutes or until slightly browned. Let cool for 5 minutes than move from cookie sheet to cooling rack. Makes 26 cookies.
