Clean Eating Belgian Waffles

Ingredients:

  • 1 Cup+ Oat flour or whole grain flour (ie: spelt flour) to your desired consistency (I just take old fashioned oats and put in food processor)
  • 1 heaping scoop of vanilla protein powder (optional)
  • 2 teaspoon baking powder (I use low sodium)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pure almond extract
  • 3 egg whites
  • 1-1/2 cup original almond milk
  • 1 teaspoon active dry yeast
  • 1 Tablespoon of Pure Raw Honey * (optional to sweeten batter if you used unsweetened milk)
  • *(Optional: if you want your batter to be a little sweeter, try adding organic Pure raw honey to the warm milk and yeast mixture)

Heat almond milk on stove top until it reaches 105-115 degrees. Add the yeast and stir. Let it sit while you mix the oat flour, protein powder, baking powder. Add the vanilla and almond extracts, egg whites and milk mixture to the dry ingredients and mix well. Let the mix sit for approximately 20 minutes while you prepare your waffle iron. Once the iron is hot, mist with Pam Olive Oil spray and pour the batter on the iron. Makes 8 waffles.
